An award-wining mixed platter of cured meats. Coppa, Lonza, Black Down Ham, Fennel and Cider Salami, Somerset Cider Chorizo.

Based in Wrington, Somerset, Friends Andy & James conceived the idea of producing quality British Charcuterie over a pint of cider at a local lawn mower race ( this is Somerset!)

Coppa - Made using the collar from free range local traditional breed pigs. A simple cure of sea salt, toasted tellicherry pepper and crushed juniper. Matured for 3-6 months.

Lonza - Made from whole loin with the fat cap removed, our Lonza is flavoured toasted Telicherry pepper and crushed juniper berries before maturing for 2-4 months. Deliciously light, tasty and lean.

Black Down Ham - free range air dried ham simply cured with sea salt and dark sugar then matured for 6-9 months. Cured and air-dried ham has a beautiful mature flavour more much than Parma ham and more delicate than a Jamon.

Fennel and Cider Salami - Made using the best local traditional breed free range pork this multi-award-winning classic salami is divine. With a delicate but pronounced fennel flavour and a trademark addition of Somerset cider which sets the whole thing beautifully.

Somerset Cider Chorizo - A traditional style chorizo with the addition of Somerset cider and using the highest quality smoked paprika. The slight tart taste developed during fermentation, with the sweetness of the cider, a mild heat from the chilli and a light smoke flavour make this one of the best Chorizos you will ever taste.

Leave to reach room temperature before serving.
